Portrait of Christophe Leroy, chef, who officiates at the Polo club of Gassin, in the Var. In an interview he explains his approach which varies according to his different establishments, whether in St Tropez, Marrakech, or in the mountains. It has taken up the tradition of white evenings inaugurated by Eddy Barclays. He likes to rub shoulders with show business people who he finds "very real and very nice".
