School canteens play an important role in feeding the child. At the Evariste Galois College in Algrange in the Moselle, the children compose their menu on a minitel screen that signals whether their choice is more or less balanced. A copy of the menu chosen by the child is then communicated to the parents. Interview with Luc MEJEAN, nutritionist, INSERM de Nancy, explaining that the school canteen must be educational. Geneviève HELSTROFFER, principal assistant college Evariste Galois of Algrange, stresses that parents will be able to balance the evening meal if the child has chosen a menu too rich at noon.
