Le restaurant Le Saint Hubert est une véritable institution à Rungis. Cette brasserie, tenue depuis vingt ans par Michel Soulenq, sert les milliers d'employés du marché international de Rungis entre minuit et la fin d'après midi, notamment ceux travaillant au pavillon des viandes. C'est le plus gros débit de cafés de France, avec 2500 tasses servies chaque jour. A toute heure, il est possible de manger au comptoir un sandwich ou d'avaler une entrecôte frites. Les serveurs doivent tenir le rythme car les clients n'aiment pas attendre. Les habitués y font une pause ou finissent une négociation. "Tout le monde est sur un pied d'égalité. On a toutes les couches sociales confondues" affirme avec fierté son gérant.
