For a relaunch of the butcher horse

France is one of the largest consumers of horse meat. And yet the number of horse butchers has fallen sharply over the past thirty years. The other possible outlets are very thin: no or few by-products possible and the disappearance of milkhorses with the appearance of tractors. This is why the revival of meat for butchers is being studied at the experimental centre of Pompadour in Chamberet in Corèze.
